3 Ingredient Protein Pancakes (paleo, gluten free, dairy free)

Today I am going to be sharing with you my STAPLE pancake recipe, I make this almost everyday, Its a definite in my breakfast repertoire. Its just so easy and fast, I love it!!
Other than that for this breakfast pancake recipe you only need 3 ingredients, and even better its gluten free, paleo, and dairy free! I feel like a chef whenever I make these pancakes, and my flipping game has definitely improved haha!
I promise you once you try this you will potentially become obsessed, they are so delicious and super fast to make, what more could you ask for??!
I love simple recipes that don't require 18372 ingredients, and that you can literally make with things you probably already have. Sometimes you don't need to use all the fancy ingredients to make a yummy healthy meal! :)
Now lets get into why you really came here for... the pancakes!!
- 1/2 Banana
- 1 egg
- 1 Scoop Plant Based Protein Powder ( My favorite is Nuzest Vanilla Lean Protein)
- Sea Salt
- Baking Soda
(These measurements are for a single serve of 2 medium sized pancakes, or 3 smaller ones!)
Mash the banana in a bowl with a fork until there are little to no clumps left.
Mix in/whisk the egg with the banana thoroughly.
Add in your protein powder of choice and mix everything well together until you have a thick consistency. (You may need to add in additional liquid if it gets to thick, you will be able to tell by the consistency. I prefer the batter on the thicker side so they cook to become more fluffy.)
Heat a pan with olive oil and cook the pancakes for 3-4 minutes on each side
Plate it, add some maple syrup and berries.
I love to cut up a bunch of strawberries and take one with each bite of pancake haha, there is a method to my madness there, its sooo good.
They turn out so fluffy too for only using 3 ingredients you will be surprised! I highly recommend adding in baking soda and sea salt.
The toppings for this are endless!! I switch it up every time so I never get tired of it haha, but usually I rotate between different berries and fruit, but you can use whatever your heart desires.
